Lemon Garlic Chicken

Taste: Terrific

Cleanup: Lots of stuff (instant pot, tongs, zester, cutting board, knife, and probably some other stuff).

Ingredients: All available at Publix.

I found this lemon garlic chicken instant pot recipe online, and thought it sounded really good, so I gave it a try with skinless (but not boneless) chicken thighs. Other than the bones, followed the recipe as written (using the printable version where there were discrepancies, like the time to set on the instant pot.)

It is a somewhat bigger pain to make than many of the other recipes I've gathered, but it really does come out very tender and tasty.

I cooked a couple of cups of brown rice to serve the chicken on (or more accurately to put in the bottom of the plastic containers I made to take in to work - I also passed on the parsley and lemon slice garnish).

At work, I microwaved the container with a paper towel on top at 30% power for 10 minutes and it came out perfect without getting dried out or tough.
