I made it exactly as described (though I couldn't find a 4 lb corned beef that was square enough to fit in the instant pot, so mine was closer to 3 lb). I also made the Red Potatoes and Cabbage, using 1 cup of the broth from cooking the corned beef instead of just water, then sliced the corned beef and had corned beef and cabbage with red potatoes. It was quite good, but tasted a bit too salty for me. If I make it again I may just use water instead of chicken broth (and maybe a bit more than 3 cups). |
