They were a little sloppy (but good). If I make it again perhaps the quart of store-bought stock with just one extra cup of water would do (instead of the 2 1/2 cups needed to hit the liquid called for). Update: I did make it again with just one extra cup, and I also reduced the time to 25 minutes. I think it came out exactly the way I like black eyed peas, so I believe I'll stick with this. I also used 8 oz of ham because I found an 8 oz package of already diced ham in the store and that was too simple to pass up. Latest version: I used chicken broth instead of vegetable broth, and dumped in about half a chopped up red onion before cooking. After it finished, I dumped in a bag of frozen broccoli florets, stirred it, and put it back on pressure for zero minutes. I think it came out better this way. (I also probably used more than 8 oz of ham since I had a leftover hunk of cure 81 I just chopped up.) |
