Veggie Wrap

For some reason I was hankering for some raw veggie wraps, so I collected a bunch of stuff that looked good in the produce section as well as some spinach wraps.

Chopped up lots of veggies:

  • Zucchini
  • Carrots
  • Red Onion
  • Gold bell pepper
  • Celery
  • Cherry tomatoes

Spread lemon garlic hummus on the wraps. Put reasonable amounts of veggies on top (don't want to make it impossible to roll up). Add some shredded Mexican blend cheese I had in the fridge. Add shredded iceberg lettuce. Roll up. Eat.

The lemon garlic hummus is terrific and goes well with the other veggies (though I think I need to put in less red onion next time - it seems to be pretty powerful).

The amount of veggies bought never come out even, but I realized I could use the leftovers for making my own vegetable broth. I also saved the fragments and peels I made while chopping the veggies for the wraps.

Update: For the laziest veggie wraps yet, I bought a bag of spring mix, some spiralized veggies already prepackaged at Publix (this package also came with a handful of cerry tomatoes). Also got some raw cashews and fried onions for crunchy chrispyness. No veggie chopping required, just spread on some hummus, add various layers of veggies, and roll up the wraps. Putting some spring mix down first helped prevent the fried onions from poking holes through the wrap.
