Thukpa chicken soupI followed this recipe. Used the Vitamix rather than food processor to make the initial glop to cook the chicken in. Seemed to work fine. Tasting it to add salt, I discovered that two serrano peppers made it a bit spicier than I like. Perhaps de-seed them next time (or just use one). [I take it back! After sitting in the fridge and re-heating the two peppers seem to be perfect with all the other ingredients.] The biggest problem was ladling it out into containers. The dadgum noodles all slid out of the ladle and flicked soup everywhere as the end of the noodle whipped around. Perhaps use tongs to just get the solids out first, then the ladle to get the broth. The expected cold front came through, getting the temperature all the way down to 50 (or "arctic" as it is known in Florida). The perfect day to have nice hot soup for lunch, and it was delicious. I'm pretty sure this is getting made again. |
