Chocolate Peanut Butter BarsWanting something sweet, yet still avoiding sugar, I made these no bake Peanut Butter Chocolate Bars I don't have a pastry cutter, so after spending a while with two knives trying to get the butter integrated into the batter, I whipped out my potato masher. It worked pretty good and I eventually got a fairly uniform mixture. Since no baking is involved, I lined a little plastic container that was about 6x6 with parchment paper and patted down the batter and layered the melted chocolate on top. Leave in fridge over night, lift out parchment and block of candy next day, cut into 9 squares (with some chocolate shattering involved) and put them back in the plastic container for keeping (after eating one, of course). They are really very good, and might be even better if I had remembered to add the vanilla extract. Note: It took closer to a minute than 30 seconds to get the chocolate to melt in my microwave. |
