Quinoa Broccoli CasseroleSaw this recipe for a Quinoa Broccoli Casserole on Good Eats Returns and always thought it looked like it would be good. I finally got around to making it, and it is indeed very good. Hopefully I'll feel the same way after eating all the leftovers (because it makes a lot). I think I maybe didn't cook the quinoa long enough because the mixture I poured into the baking dish seemed more liquid than the the one I watched on the Good Eats episode, but with an extra half hour of baking time, it still managed to reach the desired state of starting to brown and setting up. After cooling down a while it even stuck together well enough for me to lift chunks out of the baking dish and into containers to stash in the fridge. My only problem was figuring out how much broccoli to buy. Turns out that three individual stalks yields the 12 ounces of florets specified in the recipe. |
