No link for this, it is from an old Good Eats episode "A Man with a Flan" written down here by me.

Found a link after all: Refrigerator Pie

Start with a "royale" composed of 1 cup of heavy cream, 2 eggs, spin a wisk to mix well in a round wisk sized pitcher.

Get a store bought frozen pie crust (still frozen), and partly fill it with goodies (not too full). Possibilities that looked good to me:

  • Sauteed mushrooms and shredded swiss cheese.
  • Leftover chunks of chicken, goat cheese, and sun dried tomatoes.
  • Spinach with all moisture squeezed out, shredded cheddar cheese, and ham.

Light grate of nutmeg and two heavy pinches of salt get added to the royale, and spin it again with the wisk.

Slowly and evenly pour the royale over the stuff in the pie crust (don't want it filled all the way up).

In a 350 degree oven on a sheet pan (to catch any accidental overflow) bake for 45 minutes.

Start checking at 35 minutes to see if it is done. If a gentle push feels like set jello, it is probably done.

Additional check: poke center with toothpick, push again and if liquid gushes up, it ain't done yet.

Cool for at least 15 minutes before cutting.
