Low Carb Pizza Bake

I've extracted the recipe from the video so I don't have to follow along every time I make this.

First make and bake the crust:

Preheat oven to 350.

In a bowl add 3 eggs.

Then 4 oz of softened cream cheese.

Use mixer to beat till smooth.

Add 1/3 cup heavy cream.

Add Italian seasonings.

Beat it some more till well mixed.

Liberally oil a 9x13 baking dish with olive oil.

Sprinkle a layer of mozarella and cheddar shreds in pan.

Gently and evenly pour on crust mixture to fill bottom of pan.

Bake the crust at 350 for 25 to 30 minutes [30 seemed best in my oven, didn't look quite done at 25].

While that's cooking, saute some sliced mushrooms and onions in olive oil.

After crust has baked, take out of oven and let cool for at least 5 minutes.

Spread sauce on the crust.

Add half the mushrooms and onions.

Add pepperoni.

Add mozarella cheese.

Add the rest of the mushrooms and onions.

Add more pepperoni.

Add a bit more cheese.

Back in 350 degree oven till bubbly and pizza-like.

Broil for a bit to brown cheese on top (if your broiler works - mine doesn't).

Results

Cut it into six pieces and stashed them in some square plastic containers in the fridge. I'll try it tomorrow...

Incredibly delicious, but needs more than 5 minutes in my little grill/microwave combo for the grill setting to heat it back up properly, perhaps 10 will work [10 seemed good].

In fact, it is too delicious, I tried to eat just one piece and wound up eating the last few pieces in one sitting. I should avoid making this again for a long time.
