Dolly Parton's five layer dinnerThis recipe randomly popped up in some web page suggestions and it looked OK, so I thought I'd give it a try. I wound up with four layers because three fairly large russet potatoes sliced thin on my mandoline took up most of the baking dish despite all attempt to arrange them evenly. I put salt and pepper between each layer. I chopped up some fresh chives and put them on the potatoes. I used seasoned salt on the hamburger. By the time I got to the first onion it didn't seem like there was enough space for another onion or a bell pepper, so I just dumped on a can of diced tomatoes and called it ready for the oven (after topping it with foil, as instructed). Came out quite good after two hours. Very tasty. I packed up three pyrex containers and ate the final serving for lunch. Nothing super special about it, but I might make it again when I've gotten tired of wraps every meal. |
