Colcannon

Unlike corned beef and cabbage, colcannon is an actual Irish dish. I used this recipe. Basically it is just cooked cabbage mixed with mashed potatoes.

For such a simple recipe, I managed to mess up a lot of dishes, but the result is quite good (if you like cabbage, which I do).

Rather than boiling the petite red potatoes, I steamed them in the instant pot for 15 minutes and they came out fine, no uncooked crunchy bits left.
