Sheet-pan chicken and cabbageI followed this recipe exactly. It came out pretty much perfect. I may have overcooked the chicken a bit, but it is still very tasty. Probably should have tried using my temperature probe which is still in the box :-). I also ran out of maple syrup when making the slaw, so there was less than the recipe called for, but I didn't miss it at all. It took me exactly 20 minutes to make the slaw while the chicken was in the oven on high heat, so that was perfect timing. In the second phase on lower heat, the cabbage releases enough moisture to help clean the sheet pan, so that's another bonus. The roasted slaw may be better than the chicken. I love the burst of flavor you get when you hit one of the caraway seeds. It only takes a couple of minutes to reheat one thigh and serving of slaw in the microwave. It may not be quite as crispy, but it is still good. |
