Cherry Clafoutis

I've been thinking about this Cherry Clafoutis recipe since it was first published last year. They printed it again now that cherry season has arrived, and I couldn't take it any longer. I had to make it.

Since I still like to avoid sugar, I substituted swerve for sugar, but did everything else as printed.

This was also an opportunity to 3D print this cherry pitter:

Took a little while to get the hang of where the pits are most likely to be properly ejected, but worked well once I got used to it. I'm calling this a single use disposable pitter though, because it is clear the juice worked its way into the plastic where it would no doubt host all kinds of nasty growths.

The resulting pile of cerries neatly fills the 10 inch cast iron pan:

It is in the oven now and smelling really good. I'll see how it tastes when I take it out and cool it off a bit...

Now for the taste test...

It is very custardy. I may not have let it cool enough to cut properly, but it tastes wonderful, kind of like cherry flan.
