Broccoli Potato BakeI invented this to use up stuff I had around, I have no idea if it will be any good. (It was vaguely inspired by the Vitamix recipe for broccoli cheddar soup.) One bunch of fresh broccoli (that was about 3 stalks) with florets cut off and dropped into the Vitamix. Pour heavy cream into the Vitamix till about 1/3 of the way up the broccoli pile. Toss in 2 or 3 garlic cloves, grind in some black pepper, add some onion powder. Crank up the blender, and use the tamper to force everything down and turn it into a very thick green paste. Oil up a 2 qt casserole dish, and get out the mandoline slicer and 4 medium russet potatoes (that's what I had left in the bag). Slice up a potato into the bottom of the casserole, spread the slices out evenly, shake on some salt, scoop out the green paste and spread a layer on top, sprinkle shredded cheddar cheese on top, and repeat for three layers, with all the remaining green paste going on the last layer. Slice up the last potato for the top layer, add cheddar cheese and pour some cream on top to get everything moist. Cover and put in 350 oven for a half hour, then remove cover and put back in oven for another 90 minutes. I'll find out if it is any good at the end of the 90 minutes :-). 70 minutes was all I was willing to wait, but it was fully cooked by then with all the potatoes tender and delicious. May have been too high a broccoli to potato ratio, but it is still pretty darn good. |
