Low Carb Beef Stew

I found this recipe that sounded either good or horrible, depending on how the turnips tasted.

I made it mostly as described, and it was wonderful. I don't believe I'd mistake turnips for potatoes, but they tasted great anyway. Publix didn't have a chuck roast, but they did have a 1.5 lb package of already cut up beef for stew, and it seems perfectly wonderful (tender and delicious).

The xanthan gum was a suspicious ingredient (I got from amazon), but it does indeed have miraculous thickening powers. The stew came out nice and thick (and it was simpler to use than I've ever been able to get flour or corn starch to work).

I had a can of the big flat green beans I like which I also drained and added about 5 minutes before dishing it out, they seem to go well with the rest of the stew.

I called it five servings, not six, because I have five pyrex storage containers I could dish it into.

I have a lot of other stuff to eat, so I'm freezing the rest of this. Hopefully the turnips will tolerate freezing better than potatoes (the internet says they will).

Update: They do tolerate freezing! They may actually be better in the re-heated stew (several minutes in microwave at low power with container wrapped in paper towels to prevent too much moisture loss).

Next time maybe add baby bella mushrooms instead of green beans.
