Air Fryer Eggplant ParmesanI made this Air Fryer Eggplant Parmesan in my new Instant Vortex Pro. Followed the recipe as written. Got six slices from my eggplant and three slices fit in each of the fryer trays, so multiple batches were not required. I exchanged the trays once, then on the second round of cooking flipped the slices over in each tray. The breading seemed pretty uniformly crispy on both sides in both trays. Had a couple of slices for dinner, and they were quite tasty. I have the others put up for leftovers. The frozen stuff I've bought at the store has often had tough leathery eggplant skin on it. I certainly didn't notice that problem with this home made version (but I'll see how it is after reheating the leftovers). The only real problem I had was cleaning up all the bread crumb residue that winds up in the oven (but cooling off then using a damp paper towel worked well). |
