Cheeseburger Cauliflower Casserole

Adapted from original recipe.

Ingredients bumped to fit in 9x13 casserloe (bumped again since it was a little skimpy last time):

  • 2 lb ground beef
  • 16oz cauliflower
  • 4 teaspoon steak seasoning
  • 4 oz shredded cheddar cheese for the filling
  • 2 tablespoon melted butter
  • 8 oz cream cheese
  • 4 eggs
  • 8 oz heavy cream
  • 8 oz shredded cheddar cheese for topping
  • 2 Medium yellow onion

Instructions:

  • Preheat oven to 400 degrees F.
  • Microwave the cauliflower for 5 minutes.
  • In the meantime add the onion and beef to a skillet and sprinkle steak seasoning on top.
  • Once brown, add in cauliflower, cream cheese and 4 oz of cheddar cheese.
  • Mix well and then pour into baking dish.
  • In a bowl, beat eggs then whisk in cream and butter.
  • Pour over beef mixture and top with remaining 8 oz of cheese.
  • Bake 30 minutes.

Hint: If I microwave the cauliflower in the big glass bowl with plastic wrap on top, after I dump out the cauliflower, I can use the same bowl to mix the eggs, cream, and butter. One less bowl to wash!

I've got first attempt at this in the oven now. Looked like a lot of liquid when I put it in, I'll see if the eggs set things up so it isn't so squishy when done...

Definitely looks set up better after coming out of the oven. Only comes about half way up the side of the pan, so might want even more cauliflower and hamburger next time I make it (I adjusted the amounts above so hopefully it will be a better size).

Tastes good. I liked it. I'm making it again with new amounts (maybe I should bake it a bit longer?)

After the original time of 30 minutes at 400, it was still doing a good mud volcano imitation and still seemed pretty liquid. I turned the heat down to 350 and left it in for another 10 minutes, and it it seems better. The adjusted quantities nicely fill the baking dish, so they seem to be good now. I'll see what it is really like after I get it cooled and slice into it.
