Pork Chops

Taste: Pretty good.

Cleanup: Moderately painful.

Ingredients: All available at Publix

Original recipe at: Pressure Cooker Boneless Thick-Cut Pork Chops with Oniony Mashed potatoes and Pork Gravy!

I pretty much followed the original recipe for this one, but I didn't find really thick cut chops at Publix, so I settled for reasonably thick chops that came in a package with 4, so I cooked two packages for 8 total.

I guessed that using the time as specified would be right with more but thinner chops, but I think I should probably have reduced the time since they were a little dry when done.

I also don't have very good gravy making skills, so the gravy came out on the thin side.

Hard to ruin mashed potatoes though, so they came out closer to perfect than any other part of this recipe.

Needed more than just the one pot to mash the potatoes, tongs to fish the chunks of potatoes out of the pot, etc., so the cleanup is a little more extensive than my dead simple recipes.

I made this again, looking up lots of pork chop recipes and finding 7 or 8 minutes was a typical cooking time for the normal thickness chops in the other recipes, so I went with 8 minutes, and the chops were much nicer. Also obtained an actual whisk since the last attempt, so the gravy came out much better.
