Jambalaya

Taste: Wonderful

Cleanup: A fair number of things need cleanup.

Ingredients: All available at Publix.

Inspired by, but not duplicating this Jambalaya recipe, I made my own version.

No chicken andouille sausages were available, so I used pork. I'm not a big fan of shrimp, so I left them out and used more sausage and chicken. I don't like exceedingly spicy food, so I used 2 cups of rice and chicken stock rather than 1.5 to spread the seasoning out more. Finally, I had a bag of frozen brocolli florets in the freezer begging to be used, so I tossed it in along with the browned sausage slices at the end of the process.

Since the sausage had cooled down and the broccoli was frozen, I turned the instant pot back on for 0 minutes (which runs just long enough to raise pressure then instantly stops).

It came out remarkably good. Spicy without burning my mouth (yes, I'm not from Louisiana :-). The broccoli adds some slightly crunchy bits.

I've got enough for lunches at work the rest of the week now.
