Corned Beef and Cabbage

Taste: Pretty good.

Cleanup: Not too bad. You'll have some greasy tongs after fishing out the cooked brisket.

Ingredients: All available at Publix (in fact, almost impossible to avoid in the week before St. Patrick's day)

This Instant Pot Corned Beef and Cabbage recipe seems to work quite well..

I made it almost exactly as described, but used some home made vegetable broth I had rather than beef broth. I would have thought 90 minutes would be too much, but it came out quite tender and juicy. I only used a 2 1/2 lb brisket, should probably have gone slightly bigger as I wound up with too much cabbage and not enough corned beef (so I had one veggie only meal).

The three minutes for the veggies was perfect, but I should probably have used red or gold potatoes. The russet potatoes I used were pretty bland even after cooking in all the flavorful juice.

Wrapping a paper towel around the leftovers in a pyrex container and microwaving on low power for a few minutes seems to reheat things nicely without drying out.
