Chicken Pot Pie Casserole

Taste: Very good.

Cleanup: Chicken chopping tools, and the instant pot.

Followed the recipe as written, and it came out very good. The only quibble I had was the way noodles dominated everything else (not that they are bad, mind you). I may substitute one of the 12oz packages of noodles for the 16oz package the next time I make this.

This also gave me an opportunity to use up a couple of leftover chicken thighs I had in the freezer along with a couple of chicken breasts I bought.

The 16 oz packages of mixed vegetables have been hard to find, so I recently made this with just a 10 ox mixed package to which I added the bag of broccoli florets. Seemed to work well, and I didn't stir, just left the veggies on top of the noodles, which seemed to help all the noodles get properly cooked.
